Chia! Chia! Chia! Chia! Chants my belly at the moment with pom-poms and backflips galore!  Especially when my poop is not being my daily scoop! (Eeek! Soo sluggish!).  So this is when I whip up one of my favourite belly loving coconut chia puddings.  And not only are the chia seeds full of fibre, they are high in Omega-3 (great for that beautiful heart of yours!), protein and iron.  Chia seeds are also high in calcium, so they really are all round a great source of nutrients to make your body strong (and poop!).  And with the added mineral of boron, this little superstar helps your body to absorb the calcium too (and that we need!1)

Preptime: Overnight

Cook Time: 10min

Portion:  2 Glasses

Ingredients:

4 tbsp chia seeds

2 bananas

200g Organic Coconut Yogurt

2 tsp Vanilla Essence (or powder if you have it – preferred).

2 tbsp almond butter

handful of blueberries

Method:

Put the bananas, yogurt, and vanilla essence into a blender and blend well together until smooth and creamy.  Stir in the chia seeds so that they are throughout the pudding.  Pour into two small glasses and refrigerate overnight.  On serving, top with 2 tbsp of almond butter (you can have less if you want but I am a huge lover of almond butter!), blueberries and a couple of slices of banana and you, and your poop, are ready to go! 🙂  Yuuum!!
